Effect of Breed and Sex on Pork Meat Sensory Evaluation  [PDF]

This work had an objective to evaluate the sensory quality of two categories of pork meat from a commercial pork meat and a selected meat from the Portuguese black pork (Preto Alentejano breed). Sixteen animals were used, 8 females and 8 males from each breed. Animals had 80 - 100 kg of live weight. The longissimus muscle between the 5th thoracic vertebra and the 10th lumbar vertebra was used in the analysis. Sensory analysis was performed by a trained taste panel of 10 elements, in 5 sessions. All evaluation conditions were standardized, and the attributes studied were odor intensity, toughness, juiciness and flavor intensity. The taste panel found differences mainly between breeds. The panellists scored Preto Alentejano meat as being juicier, tenderer, and with richer taste than Commercial meat. The higher juiciness score of Preto Alentejano meat was probably attributable to the higher intramuscular fat content compared with Commercial meat. The Commercial pork was characterized mainly by high toughness.

Abstract: considering the increasing interest in the production and meat goat consumption and the necessity to appeal the rapid methodologies that provide to predict the body composition and quality of the carcass, we carry through a revision of the last works using ultrasound technology. after a brief history description about the evolution of the use of ultrasound methods in goats, the main important principles of the technique and its application in goats are refereed (operator, anatomical point's identification for measurements, different body and carcass measures, types of probes and equipment and animal handling). the most recent results of works in goats to predict carcass composition were mentioned. finally the future expectations for the use of ultrasound technology to evaluate in vivo goats are discussed with a reference of different procedures to obtain the prediction models.

Abstract: The objective of this work was to analyse the use of ultrasounds to predict carcass composition in kids. Twenty kids from Serrana Portuguese local breed with a mean live weight of 12.6 ± 2.99 kg were scanned by ultrasonography to determine longissimus muscle depth (LD), subcutaneous fat thickness (SF) between the 12thand 13thvertebrae (D12), 1stand 2nd (L1) and 3rdand 4th(L3) lumbar vertebra and breast bone tissue thickness at 1st(BT1), 2nd(BT2), 3rd(S3) and 4th(BT4) sternebrae. Lambs were slaughtered after 24-h fasting and carcasses were cooled at 4 oC for 24 hours. Carcass left side was dissected into muscle, subcutaneous fat, intermuscular fat and bone and remainder (major blood vessels, ligaments, tendons, and thick connective tissue sheets) associated with some muscles. Tissues measurements plus hot carcass weight were fitted as independent variables to predict carcass composition by stepwise regression analysis. Models developed 96.7% of muscle, 64.6% of subcutaneous fat, 95.0% of intermuscular fat, and 85.0% of bone weight variation, respectively. Ultrasound measurements were admitted in the models, improving the determination coefficient (R2) and reducing the residual standard deviation. The HCW and tissues measurements taken by ultrasounds in live kids can be used to develop models to predict carcass composition at slaughter-house level.
Use of heterologous antigens for the immunodiagnosis of abdominal angiostrongyliasis by an enzyme-linked immunosorbent assay

Abstract: angiostrongylus costaricensis has a broad geographic distribution spanning from north to south america and the infections of vertebrates with this nematode can result in abdominal complications. human infections are diagnosed by histological or serological methods because the isolation of larvae from feces is not feasible, as most parasites become trapped in intestinal tissues due to intense eosinophilic inflammation. because a. costaricensis is difficult to maintain in the laboratory, an immunodiagnostic igg enzyme-linked immunosorbent assay (elisa) using antigens from the congeneric angiostrongylus cantonensis species was evaluated against a panel of serum samples from patients who were histologically diagnosed with a. costaricensis infections. sera from uninfected individuals and individuals infected with other parasites were used as controls. the sensitivity and specificity of the assay were estimated at 88.4% and 78.7%, respectively. because the use of purified or cloned antigens has not been established as a reliable diagnostic tool, the use of heterologous antigens may provide a viable alternative for the development of an elisa-based immunodetection system for the diagnosis of abdominal angiostrongyliasis.

Abstract: pachycoris torridus (hemiptera: scutelleridae) has been reported as a species that can damage fruit and seed of physic nut, jatropha curcas l. the aim of this study was to evaluate the biological aspects and the damage of this stink bug species on j. curcas. eggs, nymphs and adults of p. torridus were collected and maintained in a growth chamber. some adults were confined in cages with developing fruits to damage assessment under field conditions. the postures had an average of 57.6 eggs. the incubation period was 12.7 days and the nymphal stage lasted 8.1, 10.9, 9.7, 11.6 and 11.7 days for the first, second, third, fourth, and fifth instars, respectively. the development from egg to adult was completed in 86.5 days. the copulation took 3h43min. the presence of one female, one or two couples of stink bug caused decreases of 63, 54 and 85% in fruit weight when compared with control fruit (without insects). seed oil content was reduced in 99% and 58% when fruits were attacked by a female or a couple. those fruits with two couples had no oil in seed. for mature fruits, there was not observed any change due to insect presence.

Abstract: fish contains considerably higher selenium (se) concentrations than other kinds of meats, and thus it is considered a major dietary source of this nutrient. at the same time, fish is also the major source of mercury (hg) in the human diet, whose toxicity can be reduced by the se through the interaction between both compounds. in consequence, the biological availability of se is reduced. in the current study, the occurrence of se was evaluated in commercially available brazilian marine species, and the retention of se in sharks (sand tiger shark) was determined. the average levels of se found in bony fish, gutted corvina (micropogonias furnieri), triggerfish (balistes capricus), hake and sardine (sardinella brasiliensis), 0.48 ± 0.18 μg.g-1, and in cartilaginous fish, small shark (squantina guggenheim), hammerhead shark, spinner shark, and sand tiger shark, 0.36 ± 0.07 μg.g-1, did not differ from one another (p > 0.05). in fact, their occurrence was in accordance with the literature data on marine fish. the levels of se found in the sharks (predatory species) are not enough to establish a stoichiometric relation for the interaction with hg focusing on the desired toxic protection. the effective se retention evaluated in the sand tiger shark, after extraction with water, was considered high (minimum of 68.81%) and important taking nutritional and toxicological aspects into account.

Abstract: this study examines the impact of financial statements on the prices of companies traded in the brazilian market and aims to verify how the returns of different - common and preferred capital - types of stock, react to the disclosure of annual financial results. hence, the methodology used by ball and brown (1968) was applied to two groups: the first, made up by common stock, and the second by preferred capital stock. the samples were built on the basis of data for companies traded in the s?o paulo stock exchange (bovespa), considering the period from 1990 to 2002. evidence indicates that variations in the price of preferred capital stock are in accordance with disclosed results, which confirms the hypothesis about the relevance of accounting information for investors. on the other hand, what common stock is concerned, the hypothesis was partially confirmed, since only the portfolio with negative results followed the same direction as the disclosed results.
