Self and Foreign Substances in Organic and Conventional Milk Produced in the Eastern Region of Mexico  [PDF]

Abstract:

The objective of the present study was to evaluate the physicochemical properties, presence of water and aflatoxin M1, as well as the effect of the time of year (dry or rainy season) to value the quality and safety of conventional and organic raw milk samples. Samples were collected of conventional (n = 12) and organic (n = 11) raw milk from Tizayuca, Hidalgo and from Tuxpan, Veracruz, respectively. Infrared spectrophotometry and other analytical techniques were employed, approved by the International Dairy Federation for the analysis of the physicochemical properties, the cryoscopy technique for the detection of water addition, and high performance liquid chromatography for the determination of aflatoxin M1. Results showed that there are no significant differences in the components of conventional milk in the season of the year, whereas in organic milk a significant difference (P < 0.05) was observed in acidity during the seasons of the year (rainy and dry), as well as a decrease in the percentage of lactose in the dry season, with a significant difference (P < 0.05). Aplicación de tres métodos analíticos para la detección de suero de quesería en leche UHT comercializada en la ciudad de México

Abstract: the presence of cheese serum was detected in ultra pasteurized milks (uht) commercialized in mexico city. this was achieved through sodium dodecyl sulphate poliacrylamide gel electrophoresis (sds-page), by high performance liquid chromatography (hplc) and by the calculation of the fourth derivative of the absorption spectrum (uv-4thds). monthly, ten (10) skimmed uht milk samples were analyzed during september, october and november, and the values obtained through the three methods were compared against those from authentic raw milk with addition of cheese serum in different amounts. the percentage of positive samples to cheese serum analyzed through electrophoresis, hplc and uv-4thds was 70.50 and 90%, respectively. the applied techniques related to the detection and estimation of the glycomacropeptide (gmp) by electrophoresis or by hplc, and the results obtained indicated that the quantification of the serum protein/total protein (ps/pt) relationship by uv-4thds was a more sensitive indicator of cheese serum additions.

Abstract: Se determinó la presencia de suero de quesería en leches ultrapasteurizadas (UHT) comercializadas en la Ciudad de México mediante el método de la cuarta derivada del espectro de absorción, el cual permite conocer la variación de la relación proteínas de suero/proteína total (PS/PT). La cuantifi cación de la relación PS/PT se utilizó como indicador de la adulteración con suero de quesería. El método fue estandarizado evaluando la exactitud, linealidad y repetibilidad mediante la adición de suero en concentraciones entre 0%-15% a leche cruda. Se analizaron 30 muestras de leche ultrapasteurizada descremada durante septiembre, octubre y noviembre; los valores encontrados se contrastaron con los de leche cruda adicionada con suero de quesería (0%- 15%, en niveles de 2.5%. Se encontró una diferencia marginal en la relación PS/PT para la concentración 0% entre los dos tipos de leche, mientras que el resto de las concentraciones mostró una signifi cancia alta (P < 0.01). Valores por encima de 13.5% de PS/PT expresaron adición de suero; 36.7% de las muestras de leche UHT fueron positivas a la adición de suero entre 5% y 12%. Los resultados indicaron que la cuarta derivada del espectro de absorción de la relación PS/PT fue un indicador sensible a adiciones de suero de quesería.
Composition of Triacylglycerols in Fats of Cow and Goat Milk Produced in Four Zones of Mexico  [PDF]

Abstract: The study of the triacylglycerols (TAG) by gas chromatography (GC) using capillary columns is an efficient technique for the determination of some characteristics of quality of fats and oils. The objective of the present study was to determine by GC the content of TAG present in fat of cow and goat milk produced in four zones of Mexico. According to criteria established in Mexican Standardization, 25 samples were obtained of 1 L of ultra-pasteurized cow milk (UHT) and 27 and 48 of raw cow and goat milk, respectively. The fat was extracted from all of the milk samples by detergent solution, and was stored at 20 until its analysis. The chromatographic conditions made it possible to identify and quantify TAG of 28 to 54 numbers of carbons, which were analyzed under descriptive and inferential statistical techniques. For the cow milk fat, the statistical analyses indicated significant difference (p < 0.05) in the TAG C34, C50 and C52, and for the goat milk fat in the TAG of C36 to C52. No equality of means was found among the TAG of the cow and goat milk fat. This study offers an advance in the characterization of the TAG present in the cow and goat milk fat produced in Mexico.
Detección de suero de quesería en leches ultrapasteurizadas mexicanas mediante la cuarta derivada del espectro de absorción

Abstract: presence of rennet whey solids in ultrapasteurized milk (uht) commercialized in mexico city was determined using fourth derivative of absorption spectrum method, which allows to know the variation in whey protein/total protein ratio (wp/tp). the quantification of wp/tp ratio was used as an indicator of adulteration with rennet whey solids. the method was standardized to evaluate the accuracy, linearity and repeatability by rennet whey addition in concentrations between 0-15%, in raw milk. thirty samples of skim ultrapasteurized milk were analyzed during september, october and november; found values were compared to the ones of raw milk added with rennet whey solids (0-15%, in levels of 2.5%). a marginal difference was found in the wp/tp ratio for the 0% concentration between the two types of milk, while the rest of the concentrations showed a high significance (p < 0.01). values above 13.5% of wp/tp showed rennet whey solids addition; 36.7% of the uht milk samples were between 5% and 12% positive to rennet whey solids addition. the results indicated that fourth derivative of the absorption spectrum of the wp/tp ratio was a sensitive indicator to rennet whey solids additions.

Abstract: a longitudinal study during one year was followed in order to determine year season effect (dry and rain) and breed on some physico-chemical characteristics and composition of goat milk from alpine french (af) and saanen (s), with the aim of establish criterion to buy goat milk. milk samples were collected from both breeds (af and s), reaching a total of 25 and 27 samples of each breed respectively. milk analysis was carried out by the methods recommended by aoac and fil/idf. af milk showed higher values for protein, total solids (ts) and non-fatty (snf) contents (p < 0.01) as well as for, density, fat and lactose values (p < 0.05). the lowest fat, protein and ts levels were found in both breeds during rainy season. year season variations in ph and ts contents were statistically different (p < 0.01), along with snf (p < 0.05) between goat milk under study. an interaction breed-year season was observed for protein (p<0.01), snf (p<0.01) and ts (p<0.05).

Abstract: a profession can be improved through the development and application of scientific and technological advances around the issues relating to their expertise. recently, the deciphering of the genetic code and human genome sequencing creates the basis for the development of methodologies and techniques of molecular biology. these resources have allowed a deeper understanding of the human tissue structure and function, and intervention mechanisms used by health professionals. physiotherapy uses physical modalities affecting the tissues of the body, for that reason, molecular biology offers professionals a better understanding of the effect of these types of interventions implemented in different tissues. thus, the physical therapists should be aware about the importance of this basic science and its clinical use in everyday problem solving that generate a new evidence-based practice to contribute to professional development. salud uis 2011; 43 (3): 317-320

Abstract: Para que el cuerpo de conocimiento de una profesión crezca y se fortalezca debe estar al día con los avances científicos y tecnológicos que surgen continuamente para incluirlos en el repertorio de recursos que usa para la investigación de problemas específicos de su saber. Recientemente el desciframiento del código genético y la secuenciación del genoma humano creó la base para el surgimiento de metodologías y técnicas en el área de la biología molecular, las cuales permitieron profundizar en el conocimiento de la estructura y función de los tejidos humanos y también mejoraron el entendimiento de los mecanismos por los cuales actúan formas de intervención usadas cotidianamente por profesionales en salud. La Fisioterapia utiliza modalidades físicas que interactúan con los tejidos corporales, por ello la biología molecular permite un mejor entendimiento de los efectos que las dichas modalidades generan en el tejido sobre el cual son aplicadas. Por tanto el objetivo de este artículo es reflexionar sobre la necesidad de que el Fisioterapeuta se apropie del conocimiento en ésta área de las ciencias básicas, usarlo como herramienta para la solución de preguntas relevantes de su quehacer clínico y así contribuir de manera efectiva con la generación de nuevo conocimiento que promueva la práctica basada en la evidencia y fomente el crecimiento de la profesión. El logro de un desempe o ambiental razonable requiere de un compromiso de la organización, para un enfoque sistémico y un mejoramiento continuo de su Sistema de Gestión Ambiental (SGA).
