Utiliza??o de diferentes embalagens plásticas para a conserva??o de produto minimamente processado de mangas 'Tommy Atkins'

Abstract: the aim of this work was to evaluate the conservation potential of 'tommy atkins' mangoes minimally processed by using different types of plastic cover to establish a passive modified atmosphere (ma). the fruits, collected in mature-green stage, showed purple-green colour (1:1), ss content of 8.9±0.3 °brix, titratable acidity (ta) of 1.25±0.5g of citric acid.100g flesh-1 and fresh mass of 565±25g. the fruits, after sterilized in an acid solution (ph=3.0) of chlorine (naocl), 100mg.l-1, during 10 minutes, were chopped into parts of 0.02±0.01m of width and 0.05±0.015m of length, one more time sterilized in an acid solution (ph=3.0) of chlorine (naocl), 10mg.l-1, during 3 minutes. the parts, in a cube format of 0.02±0.01m width and 0.05±0.015m length, were placed in rigid poliestiren trays (0.19x0.12m), with capacity for 250g and covered with the following materials: t1 (control): low density perfured polyetilen film (ldppf) of 0.006mm (35 perforations in the surface of the packing to simulate the conventional atmosphere); t2: ldpe film of 0.020mm; t3: ldpe film of 0.060mm; t4: ldpe film of 0.080mm; t5: polypropylene film (pp) of 0.052mm and t6: hermetic rigid polietilen tereftalate (pet), with capacity for 500ml and dimensions of 0.22x0.12x0.11m, with lid cover of the same material, without perforations and without the plastic cover. the treatments were placed in a cold chamber at -10±0.5°c and 90±3.0% of r.u. for 10 days. it was not observed significative difference among treatments for ss and ta analysis. the higher microbilogical activity was observed in fruits covered with ldppf films of 0.006 and ldpe of 0.20mm. the lower loss of fresh matter, the best maintenance of ascorbic acid, the absence of microbiological contamination, the best visual aspect and the panelists' preference in the sensorial analysis were observed in fruits placed in pet containers.

Abstract: The aim of this work was to determine the amount of ascorbic acid, total phenolics and carotenoids and evaluate the antioxidant potential of mango varieties “Espada”, “Rosa” and Tommy Atkins. The fruits were ground to obtain the fresh pulp and waste resulting was dried, crushed to pass through sieve. Hydroacetone, hydromethanolic and aqueous extracts, obtained through sequential extraction procedure from pulp and dehydrated waste were screened for their antioxidant activity by DPPH free radical scavenging. The “espada” and Tommy Atkins mango showed similar levels of total carotenoids, however less than Rosa mango. The Tommy Atkins mango exhibited the lowest content of ascorbic acid and the espada mango the highest level of phenolic compounds. The extract hydroacetone (pulp and dehydrated waste) exhibited a strong free radical scavenging capacity ( > 80%). O objetivo deste trabalho foi quantificar o teor de ácido ascórbico, carotenóides e fenólicos totais e avaliar o potencial antioxidante de mangas das variedades Espada, Rosa e Tommy Atkins. As frutas foram desintegradas para obten o da polpa, os resíduos resultantes desidratados, triturados e tamisados. Extratos hidroacet nico, hidrometanólico e aquoso, obtidos por processo de extra o sequencial a partir da polpa fresca e do resíduo desidratado foram submetidos à determina o da capacidade de seqüestro do radical DPPH. A manga Espada e a Tommy Atkins apresentaram teor de carotenóides totais semelhante entre si, porém inferior ao da manga Rosa. A manga Tommy Atkins exibiu o menor teor de ácido ascórbico e a Espada o maior teor de fenólicos totais. O extrato hidroacet nico da polpa e do resíduo exibiu uma forte capacidade de seqüestro (superior a 80%).

Abstract: Sete aplica es de cloreto de cálcio (0,6 ou 1,2%) foram realizadas em pré-colheita de mangas `Tommy Atkins' para verificar seus efeitos sobre o teor de cálcio na polpa dos frutos e a evolu o do amadurecimento. As avalia es foram realizadas na colheita e durante doze dias de armazenamento a 25oC e 60-70% UR. Os tratamentos n o elevaram o teor de cálcio na polpa e n o influenciaram a perda de peso, o teor de sólidos solúveis totais, a acidez total titulável e a firmeza de polpa dos frutos.

Abstract: the objective of this experiment was to evaluate the post harvest quality of 'tommy atkins' mangoes during refrigerated storage, using different types of packing. the modified atmosphere corresponded to the following treatments: fruits conditioned individually in plastic trays, covered with plastic film of polivinil chloride (pvc) of 14 μm, without and with sachet of potassium permanganate (10 g); fruits conditioned individually in low density simple wall polyethylene bag of 25 μm made with and without potassium permanganate; conditioned fruits, in groups of 5, in carton boxes with cover, covered internally or not with low density polyethylene made with and without potassium permanganate. the fruits were stored under at 13 ± 1°c, 85-90% rh for 20 days and then transferred to 24,4 °c, 70% rh storage room. the evaluated variables were: loss of fresh mass, appearance, firmness of the pulp, soluble solids, titratable acidity and ascorbic acid. it was verified that the best treatment of modified atmosphere was individual packaging of the mango fruits in plastic trays, covered with plastic film of polivinil chloride (pvc) of 14 μm. the potassium permanganate, in the form used in this study (sachet and impregnated in plastic film), did not affect the conservation of the fruits.

Abstract: Estudou-se o efeito da embalagem de policloreto de vinila (PVC) sobre a vida de prateleira de mangas cv. Tommy Atkins armazenadas sob refrigera o. Mangas no estádio de maturidade fisiológica, com casca verde ou levemente avermelhada, foram embaladas individualmente, com filme de 10mm de espessura, e armazenadas por 28 dias a 12oC (80-90% UR). Frutos sem embalagem serviram de controle. Durante o período de armazenagem, foram feitas avalia es sensoriais utilizando o método de escala hed nica n o estruturada para aceita o da aparência e do sabor, utilizando-se de 30 provadores n o treinados por sess o. Determinou-se também a perda de massa, a acidez titulável e os teores de sólidos solúveis e vitamina C ao longo da armazenagem. As mangas embaladas apresentaram uma vida de prateleira de 21 dias contra 6 dias das n o embaladas, e uma taxa de perda de massa 3,5 vezes menor que as n o embaladas. Em rela o à taxa de degrada o de vitamina C, n o houve diferen a entre os tratamentos. A combina o da embalagem com a armazenagem a 12oC aumentou a vida de prateleira do produto pela redu o da atividade metabólica e do desenvolvimento de podrid o.

Abstract: The objective of this experiment was to evaluate the post harvest conservation of mangos ‘Tommy Atkins’, during a storage, using different types of packings. The modified atmosphere corresponded to the following treatments: fruits conditioned individually in plastic trays, covered with plastic film of polivinila chloride (PVC) of 14 μm, without and with sachet of potassium permanganate (10 g); fruits conditioned individually in polyethylene bag of low density 25 μm of simple wall addictived or not with potassium permanganate; conditioned fruits, in groups of 5, in carton boxes with cover, covered internally or no with low density polyethylene film addictived with potassium permanganate. The fruits were stored under storage room at 24,4 oC, 70 % RH. The evaluated variables were: loss of fresh mass, appearance, firmness of the pulp, soluble solids, titratable acidity and ascorbic acid. It were verified that the best treatments of modified atmosphere were individual packaging of the mango fruits in plastic trays, covered with plastic film of polivinila chloride (PVC) of 14 μm, without and with sachet of potassium permanganate. The potassium permanganate, in the form used in this study (sachet and impregnated in plastic film), did not interfere in the results obtained for the conservation of the fruits. O presente trabalho objetivou avaliar a conserva o pós-colheita de mangas ‘Tommy Atkins’, durante o armazenamento em condi es de temperatura ambiente, utilizando diferentes tipos de embalagens. Os tratamentos foram: frutos acondicionados individualmente em bandejas de acetato transparente, revestidas com filme plástico de cloreto de polivinila (PVC esticável) de 14 μm, sem e com sachê de permanganato de potássio, preparado utilizando-se vermiculita como substrato, impregnada com KMnO4 (10g / 500g de fruto); frutos acondicionados individualmente em sacos plásticos de polietileno de baixa densidade 25 μm de parede simples (PE) confeccionado ou n o com permanganato de potássio e frutos acondicionados, em grupos de 5, em caixas de papel o com tampa, revestidas internamente ou n o, com filme plástico confeccionado com permanganato de potássio. Os frutos foram armazenados a temperatura ambiente média de 24,4 °C, 70% UR. Foram avaliadas a perda de massa fresca, aparência, firmeza da polpa, teor de sólidos solúveis, acidez titulável e ácido ascórbico. Abstract: seven applications of calcium chloride (0.6 or 1.2%) were made before harvest of `tommy atkins' mangoes to verify the effect on calcium content in fruit pulp and the evolution of ripening. the evaluations were made at harvest and for twelve days of storage at 25oc and 60-70% rh. there was no increase of calcium content in fruit pulp. the weight loss, total soluble solids, total titratable acidity and pulp firmness were not affected by treatments.

Abstract: the objective of this work was to evaluate the influence of chitosan in the post-harvest of 'tommy atkins' mangoes, harvested in the semi-ripe stage and stored at 23oc (65% rh). mangoes from ceagesp, ribeir?o preto, sp, brazil were transported to the laboratory of technology of agricultural products of unesp jaboticabal. after selection, the fruits were washed and the surface sanitized with a solution of dichloro s. triazinatriona sodium dihydrate (sumaveg?) 200 mg 100g-1 of free chlorine for 10 minutes, dried, dipped in solution 0%; 1.0%; 1.5%; 2.0% oh chitosan for 1 minute, dried under ventilation, packed in trays and stored at 23±2°c and 65±5% ur for 9 days. three replicates of two fruits each were used. the fruits every three days had the weight loss, the color, the firmness, the ascorbic acid content, the soluble solids, the titratable acidity and the soluble solids / titratable acidity evaluated. the coating with chitosan delayed the ripening of 'tommy atkins' semi-ripe mangoes stored at 23oc. the concentration of 1.5% provided better maintenance of color, firmness, ascorbic acid content, soluble solids, titratable acidity and soluble solids / titratable acidity

Abstract: it was aimed to evaluate the efficiency of coatings based on carboximethyl cellulose (cmc) and dextrin applied in 'tommy atkins' mango fruit stored for zero, ten and 20 days under refrigeration (12.4±3.1°c and 72±12% rh) and, after this period, submitted to ambient conditions (20.3±3.0°c and 40±7% rh) for three, six, eight and nine days. the cmc 1.0% + dextrin 0.2%, cmc 0.8% + dextrin 0.5% and cmc 0.5% + dextrin 1.0% coatings were compared to the control. the experimental design was completely randomized in factorial 4x7 (coating x storage time), with four replicates constituted by three fruits. the application of cmc 1.0% + dextrin 0.2% or cmc 0.8% + dextrin 0.5% delayed the soluble solids accumulation, the titratable acidity reduction and the skin color evolution, increasing fruit brightness that ensured a better appearance. the responses indicate a delay on maturation that was more evident on cmc 0.8% + dextrin 0.5% treatment.

Abstract: the experiment was carried out with the objectives of to characterize thee it's harvesting maturity of 'tommy atkins' mangoes. the fruits were marked and evaluated on at 82 (e1), 89 (e2), 96 (e3) e and 103 (e4) days after flowering full bloom (daf) and at the commercial harvesting stage (csec). evaluations were carried out , on the day of the harvest and after 21 days of under refrigerated storage (13 ± 1° c e and 99 % r.h.). the characteristics evaluated were skin and pulp color, weight loss, firmness, total soluble solids (tss), total titrable acidity (tta), tss/tta ratio, total soluble sugar and starch contents, and respiratory activity. it was concluded that, climacteric respiratory peaks happened were noticed after 10 days after harvest in mangoes harvested at stage e2 and after 7 days forin those harvested at stages e3 and csec. fruits harvested at e2, e3, e4 and cs ec stages, ripened normally after 21 days of in refrigerated storage. mangoes harvested at e3 and cs ec stages had similar behavior and showbehaved similarly and reached eating the high quality, indicating that harvest should can be done at these stages, and that 96 daf should be considered as another harvest maturity index.
